Doughies now supplies both fresh and frozen pizza dough to businesses across South East England. We create a delivery schedule to suit your business and work with your team to ensure you get the most out of your dough.

Fresh or frozen

We offer a tailored solution to suit your kitchen. We can deliver dough to you in commercial dough trays ready to be used in your restaurant, or frozen dough balls to be thawed and used as needed.

If you receive fresh dough in trays, we'll simply rotate the empty for full ones whenever your new dough arrives.

We specialise in biga dough

We specialise in dough made with a biga pre-ferment, with final fermentation being cold proofed over 48 hours. Our dough management is temperature controlled to not only create the best possible product, but also to ensure you receive exactly the same dough whether it's the middle of Summer or the heart of Winter.

We have a few options for the dough we supply:

  • We offer Neapolitan dough, generally at 63% hydration, made with biga and proofed for 72hrs. This is the dough we use in our own pizzeria, Peeps Pizza and Gelato.
  • We produce a New York style dough, also at 63% hydration that includes olive oil for a crisp base and perfectly coloured crust.
  • If you'd like to offer customers a healthier option, we can produce an 80/20 combo dough that is made with 20% Type 2 wholewheat flour, giving it an added depth of flavour and a more fibre-rich nutritional profile.
  • We can also customise a dough to suit your style of pizza. Chat to us about your style, and what you need from your dough, and we'll create a plan to ensure we can provide it to you 365 days a year.

All our doughs develop deep flavour due to their long fermentation process and we will work with you to ensure we supply the perfect dough for your style of pizza and your specific oven.

 


We work with your chefs

We are happy to work directly with your pizza chefs to ensure they're getting the best out of your dough, from stretching the base, to baking the perfect pizza. We run our own pizzeria, Peeps Pizza, as a showcase of our product and we work with your team to ensure you're putting out the best possible product.

If you're new to pizza and need some advice, we're more than happy to help however we can to get you up and running, from choosing an oven, to handling your dough or understanding the staff you'll need in the kitchen. We're a friendly bunch and we'll make sure you're ready.

We deliver throughout London and nearby Counties

We generally deliver every second day as our is refrigerated. Deliveries are made in refrigerated vans to ensure your dough is delivered in perfect condition. We'll work with you to create a delivery schedule that works best for your kitchen and your process.

Our delivery area for restaurants covers London, Surrey, Berkshire, Herts, and Kent.
